A sign announcing that Cook’s was “coming soon” remained in the window for many years as the restaurant dealt with challenges related to staffing, the pandemic, and health issues, according to a Pleasanton Weekly report. The yearslong delay became a running joke among some Pleasanton residents. However, work began in 2024, and the restaurant finally opened at the Koll Center Plaza May 12, 2025. Cook’s began in 1928 as a fish market that also served fish and chips, and later expanded into a full-service seafood restaurant.
